Soft & Chewy Date Cookies

Soft, chewy and delicious, these cookies are simply the BEST. The perfect combination of sweet and nutty flavor. Since it is a drop cookie, it is so easy to make.

Ingredients

  • 3 cups Flour
  • 1 cup Butter (room temperature)
  • 3/4 cup brown sugar (packed)
  • 3/4 cup white sugar
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 3 Eggs (room temperature)
  • 1 1/2 cups Dates (chopped) dredge in flour
  • 1 tbsp flour for dredging the dates
  • 1 tsp vanilla
  • 3/4 cup Walnut
  • 3/4 cup Pecan (optional)

Instructions

  • Combine your flour, baking soda and salt. Set aside
  • Using your stand mixer or hand mixer, cream your butter, then add brown sugar and white sugar. Mix until light & fluffy.
  • Add eggs to the butter and sugar mixture, beat until smooth and well combined
  • Gradually add your flour mixture, 1 cup at a time.
  • Fold in your dates and walnuts, mix until it forms into a dough.
  • Chill your dough at least 2 hours or overnight.
  • Pre- heat your oven to 350 degrees F or 176 degrees C
  • Line your baking sheet with parchment paper or silicon baking mat
  • Scoop your cookie dough and drop it 2 inches apart.
  • Bake for 20 to 22 minutes in the center rack of your oven.
  • Cool completely. Enjoy!!

Notes

Freezing the dough is BEST. What you need is just to pre-scoop the dough then place it in a freezer bag or an airtight container.
When its time to bake, place the frozen cookie dough balls 2 inch apart on the lined cookie sheets. Bake 2 minutes longer than the recipe calls for.
