Moist Pineapple Carrot Cake

This recipe is a delightful twist on the classic carrot recipe. It's moist, fluffy, and bursting with tropical flavor. It's perfect for any occasion and a crowd-pleaser that will satisfy any sweet tooth.

Ingredients

  • 1 cup Apple sauce (unsweetened)
  • 1 1/2 cups Brown sugar
  • 4 Eggs (room temperature)
  • 3 1/2 cups Grated Carrots
  • 1 cup Crushed Pineapple (undrained)
  • 3 1/2 cups All-purpose flour
  • 1 tbsp Cinnamon
  • 1 tsp Nutmeg
  • 1/2 tsp Salt
  • 1 tbsp Baking powder
  • 1 tbsp Baking Soda
  • 2 tsp Vanilla

CREAM CHEESE FROSTING

  • 8 oz Cream cheese package (softened to room temperature)
  • 1/2 cup Butter (softened to room temperature)
  • 2 tsp Vanilla
  • 1 cup Icing sugar
  • 3/4 cup Walnuts (toasted) - optional

Instructions

  • Preheat oven to 325 degrees F. Spray 2 - 8 inches round baking pans, or 1 - 9x13 inch baking pan.
  • Mix apple sauce and sugar well, add eggs one at a time, and beat until light and fluffy.
  • Add carrots, pineapple, and vanilla. Mix well
  • Combine dry ingredients and fold them into the wet mixture. Make sure not to over-mix the batter.
  • Pour into 2 - 8" round greased pans.
  • Bake at 325 degrees F for 40-45 minutes or until a toothpick comes out clean.
  • Let stand for 5 minutes, and transfer to a wire rack to cool completely.

TO MAKE CREAM CHEESE FROSTING

  • Using a stand mixer or hand-held mixer, cream butter and cheese thoroughly beat until smooth.
  • Add vanilla and mix, fold in icing sugar and beat until light and fluffy. Scraping down the sides of the bowl as needed.
  • Once the cake has cooled completely, spread the cream cheese frosting evenly over the top (or side) of the cake. Add some toasted walnuts on top of the cake if desired.
    Serve and enjoy!

Notes

You can also add other mix-ins to your cake batter such as raisins or shredded coconut for added texture and flavor.
