Easy Sheet Pan Sausage Potato & Peppers

Easy recipe for weeknights dinner, a fuss free meal with simple ingredients all in one pan.

Ingredients

  • 2 Sausage -cut into diagonal or round size Depending on the size- you add more if preferred
  • 5 Potato medium size - yellow or red - cut into bite size
  • 1 Green pepper (any color will do)
  • 1 Red small onion
  • 3 Garlic cloves - minced
  • 1 tbsp Italian seasoning
  • 2 tbsp Olive oil
  • 1/4 tsp Salt
  • 1 /4 tsp Pepper
  • Parsley for garnish
  • 1/4 tsp Chili flakes (optional)
  • 2 strips Bacon - cut into smaller pieces (optional)

Instructions

  • Preheat your oven to 400 degrees F
  • Slice your sausage into half inch rounds. Set aside.
    (If using uncooked sausage, boil the sausage first before slicing)
  • Cut the bacon into smaller pieces
  • Combine salt, pepper, Italian seasoning & chili flakes
  • Cut your potato into bite size, make sure that they are cut consistently. Same thing with your onion, pepper and garlic. Then set aside
  • Place your potato first in the sheet pan, add 1 tablespoon of olive oil, minced garlic, half of the salt, pepper, Italian seasoning mixture and combine so that potato is coated evenly. Then add the bacon on top.
    Bake in the preheated oven for 15 minutes.
  • After 15 minutes, take the sheet pan out then add the remaining ingredients, then place the sheet pan back in the oven roasting it for 10 to 15 more minutes. Once the potato is cooked then it is done.
