How to make White Bean & Lettuce Salad
To make the lemon & cilantro lime dressing:
- Zest the lemon and measure 1 teaspoon, then squeeze the juice out of 1 lemon
- Finely mince the garlic and cilantro (use half bunch)
- Combine olive oil, lemon juice, minced garlic & cilantro then mix well.
- Set aside

White Bean & Lettuce Salad with Cilantro Lemon Dressing
Ingredients
- 1 can White Beans or Cannellini beans, drained and rinsed
- 1 med Red Onion chopped
- 1 Romaine Lettuce (thinly sliced)
- 1/2 cup Sun-dried tomatoes (not oil-packed)
- 1 Lemon
- 1 tsp Lemon zest
- 2 cloves Garlic (grated)
- 3 tbsp Olive Oil
- 1/4 cup Cilantro (chopped)
- 1/4 cup Cilantro (finely minced) for the dressing
Instructions
To make the lemon cilantro dressing
- Zest lemon to measure 1 tsp and squeeze the juice out of 1 lemon.
- Mince the garlic and finely chop the cilantro
- Combine olive oil, lemon juice, lemon zest, garlic & cilantro, and stir everything to mix well. Add salt and pepper to taste.
- Another option to make the dressing is to add everything to a blender. Blend together until combined.
Making the salad
- Thinly slice sundried tomatoes, lettuce, and onion. Chop cilantro roughly.
- Rinse and drain white beans.
- Combine all the ingredients in a bowl.

- For easy sundried tomato slicing, soak it with water for a few minutes, drain then slice.
