This is a crowd pleasing salad, a feel good salad that is fresh, filling, and refreshing. One of my favorite side dish to make on a hot summer days.
We love sweet corn for everything from grilled corn, corn chowder, corn bread and this Corn and Cucumber salad that is also great for summer potlucks, picnics and BBQ’s all year round, using fresh or frozen corn. And it’s easy to prepare.
I recommend using fresh corn when its available, but you can either use frozen or canned corn instead for this recipe, and that means its great anytime.
If using frozen corn, just follow the instruction from the package. For canned corn, you can use it straight off from the can, thoroughly rinse it then drain.
HOW TO MAKE CORN & CUCUMBER SALAD
Chop – the veggies: cucumber, red & green pepper, red onion into small dices.
Cook – your corn using any method (grill or boil if using fresh corn).
Whisk – combine your dressing ingredients in a small bowl, adding salt & pepper as desired.
Pour your dressing (I recommend to start half) on the salad and toss. You can either add more dressing according to your preference.
This Corn & Cucumber salad is also perfect to make ahead.
MAKING AHEAD. This recipe is perfect for making ahead if you’re planning a BBQ or gathering and don’t want to worry about having to make a fresh salad right beforehand. You can combine all the veggies ahead of time, and then just add the dressing when you’re ready to serve at your party!
NOTE: Lime vinaigrette is also good for this recipe, or you can just use fresh lime juice if you want it plain and simple. Add a dash of crushed chili flakes if you want a little kick of flavor to your salad.
This salad is perfect side dish to my LEMONGRASS ROASTED CHICKEN.
CORN & CUCUMBER SALAD
- 6 ears Fresh corn / 3 cups frozen or canned corn
- 3 Cucumbers chopped
- 1 Red pepper chopped
- 1 Green pepper chopped
- 1 medium Red onion chopped
- 1 cup Italian dressing
- 2 tablespoon lemon juice
- 2 teaspoon sugar can either use honey
- salt & pepper to taste
- Cook corn until tender (can be grilled or boiled). Once cooked, remove kernels from corn
- Chop cucumber, red pepper, green pepper and red onion.
- In a small bowl, mix salad dressing then pour over corn mixture and toss well.
- chill for a few hours before serving
