These date cookies are soft, chewy, and delicious. It has a rich taste and a nutty flavor that comes from the dates and walnuts. They are so addicting and that you will crave for more!
This recipe is the cookie version of my old time favorite, Food for the Gods. As what my family and friends know, it is my very own traditional Christmas decadent treat. 🙂
Drop cookies are easy to make. It’s the process of creaming the butter, adding the sugar, egg, dry ingredients, dates, and walnuts. Mix, drop and bake. Easy, right?!!Â
These Date cookies are perfect as a daily sweet treat, especially if you are craving for something sugary and just want to have a little bite.
In addition to this, it is also an excellent goodie. For instance, Holiday Season is already around the corner, (although you can make this any time of the year) you can easily make this soft & yummy Date cookies as a homemade gift, perfect for family and friends. In fact, nothing beats homemade treats.
In short, you can never go wrong with these delicious soft and chewy cookies.
SOFT & CHEWY DATE COOKIES
INGREDIENTS
3 cups All purpose flour
1 cup butter (room temperature)
3/4 cup brown sugar
3/4 cup white sugar
3 eggs
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla
1 1/2 cup chopped dates (dredge in 1 tbsp flour)
3/4 cup walnuts
3/4 cups pecan (optional)
How to Make SOFT & CHEWY DATE COOKIES
Step 1
- Combine your flour, baking soda, salt
- In a large mixing bowl, cream your butter, then add brown sugar & white sugar until light & fluffy. Then add the eggs.
- Beat until smooth and well combined.
Step 2
- Gradually add in your flour mixture and combine.
- Fold in your dates and walnuts
- Mix until it forms into a dough
- Chill your dough for 2 to 4 hours
Pre-heat your oven to 350 degrees F or 176 degrees C.
Line your baking sheet with parchment paper or silicon baking mat.
Scoop your dough and drop it 2 inches apart.
Bake in the middle of the rack for 20-22 minutes.
Cool completely and Enjoy!
TIPS:
- When making a drop cookie dough recipe, DO NOT over cream the fat and sugar. It causes to aerate the cookie dough too much, and it makes them puff in the oven and fall into a flat, greasy pancake like cookie.
- It is important to use room temperature butter when creaming.
- Do not overmix the dough
- Leave enough space in between cookies, place them 2 inches apart when baking
- Always refrigerate cookie dough while the rest bakes
MAKE AHEAD & FREEZING INSTRUCTIONS:
DOUGH
- The dough can be made and covered, chilled for up to 24 hours, then form the dough into balls.
- Place it on a plate & chill in the fridge for 30 minutes to 1 hour.
- Once it’s chilled, put the dough balls into a freezer bag and freeze for up to 3 months.
- When ready to bake, put your dough balls in a baking sheet lined with parchment paper. Bake according to instruction, adding 2 more minutes in the baking time.
BAKED COOKIE
- Baked cookies can be frozen for up to 3 months as well. Make sure to cool it completely before freezing.
- Thaw the cookies in the fridge, then bring it to room temperature before ENJOYING!!

- 3/4 cup white sugar

- 1 tbsp flour for dredging the dates
- 1 tsp vanilla
- 3/4 cup Walnut

Instructions
- Combine your flour, baking soda and salt. Set aside
- Using your stand mixer or hand mixer, cream your butter, then add brown sugar and white sugar. Mix until light & fluffy.
- Add eggs to the butter and sugar mixture, beat until smooth and well combined
- Gradually add your flour mixture, 1 cup at a time.
- Fold in your dates and walnuts, mix until it forms into a dough.
- Chill your dough at least 2 hours or overnight.
- Pre- heat your oven to 350 degrees F or 176 degrees C
- Line your baking sheet with parchment paper or silicon baking mat
- Scoop your cookie dough and drop it 2 inches apart.
- Bake for 20 to 22 minutes in the center rack of your oven.
- Cool completely. Enjoy!!
