TIPS:

  • When making a drop cookie dough recipe, DO NOT over cream the fat and sugar. It causes to aerate the cookie dough too much, and it makes them puff in the oven and fall into a flat, greasy pancake like cookie.
  • It is important to use room temperature butter when creaming.
  • Do not overmix the dough
  • Leave enough space in between cookies, place them 2 inches apart when baking
  • Always refrigerate cookie dough while the rest bakes

MAKE AHEAD & FREEZING INSTRUCTIONS:

DOUGH

  • The dough can be made and covered, chilled for up to 24 hours, then form the dough into balls.
