This Mango and Cucumber salad with Lime dressing makes a great salad on its own. However, this colorful salad is also a perfect fresh & bright side dish for your summer BBQ.
The combination of sweet mangoes, the crispness of sweet peppers, and the refreshing taste of cucumber along with the juice of the lime is an explosion of flavors.
Summer salad is the best combination of crunchy, colorful, and most of all refreshing vegetables and fruits.
Mango is one of my favorite tropical fruit growing up. I ate both yellow or green, ripe or unripe, and lastly sweet or sour. 😀

This recipe that I am sharing with you is super easy to make.
You only need 9 ingredients to make this recipe, and I bet you even have the last 3 ingredients are in your cupboard. 🙂
Here are the ingredients to make this Mango Cucumber Salad
- Mango
- Cucumber
- Red Bell Pepper
- Red Onion
- Cilantro
- Lime (juice)
- Sugar or HoneyÂ
- Salt
- Pepper
How do you make this Salad?
- Start by slicing your mango, cucumber, red bell pepper, and red onion thinly.
- Roughly chop your cilantro
To make the lime dressing:
Mix lime juice with brown sugar and salt, stir until the sugar is dissolved.
- Put all the ingredients in a salad bowl, including the cilantro
- Pour the dressing on top. Stir to combine the ingredients until the mango, cucumber, red bell pepper, onions are coated with the dressing.
- Serve immediately or refrigerate until ready to eat.Â
- Stir well before serving each time, to redistribute the lime dressing.
Make-ahead tips:
Mangos, cucumber, red bell pepper & onions can be cut the day before, store in the fridge in a separate container.

Dressing can also be made ahead of time, and then dressed just before serving. I like to add my dressing a few hours before serving, that way the flavors blend well.

This salad is great on its own. But aside from that, it is also perfect as a side dish for chicken bbq or any grilled meat.

Ingredients
- 2 Mangoes - thinly sliced ripe
- 1 Cucumber - thinly sliced
- 1 Red Pepper - thinly sliced
- 1 Red Onion - thinly sliced
- 1/4 cup Cilantro - chopped
Lime Vinaigrette Dressing
- 3 tbsp Lime juice-freshly squeezed (1 big lime or 1 1/2 if using small)
- 2 tbsp Brown sugar
- 1/4 tsp Salt
- Freshly ground pepper
Instructions
- Combine sliced Mango, Cucumbers, Peppers, Red Onions, and Cilantro on top in a bowl.
- To make the dressing:Mix lime juice, sugar, and salt. Mix well until the sugar is dissolved
- Pour the dressing over top, stir to combine the ingredients & coat the mango & cucumber in dressing.
- Serve immediately or refrigerate until ready to eat. Stir well before serving each time to redistribute the dressing.
