An Easy Summer Fruit Salad that is loaded with fresh Watermelon, Mango, Pineapple, Strawberry, Blueberry along with a can of Lychee.

Because it is amazingly delicious. 😊 Above all its a power-packed dose of fiber, vitamins and antioxidants.
The combination of all the fruits, the lime dressing, and mint. Everything is so flavorful, colorful, sweet and tasty.
In fact, this is not just your ordinary fruit in a bowl, this is what I call an elevated Summer Fruit Salad.
How do you make summer fruit salad?
Let’s start by chopping off the fruits into bite size.
Watermelon:Â cut into cubes or you can also use melon ball scooper
Mango:Â thinly sliced or cubes
Pineapple:Â you can either use fresh or canned, cut into cubes
Strawberry:Â cut into quarters or vertical
Lychee:Â chopped and reserve the juice
Blueberry:Â rinse thoroughly
Mint:Â chopped coarsely and leave a couple as garnish (the fresh mint came from my garden)
Place everything in a large bowl. Together with your coarsely chopped mint.
For the dressing, mix the reserved lychee juice and the juice of your lime. then pour your dressing into your bowl and combine. Easy, RIGHT???!!

Summer Fruit Salad
Ingredients
- 3 Cups Watermelon - chopped into bite size
- 1 Cup Strawberry - sliced thinly
- 1 Whole Mango - Sliced thinly or diced
- 1 Cup Pineapple - cut into bite size
- 1 Cup Blueberry
- 1 Cup Lychee (canned) - chopped - reserve juice
- 1 Lime (juice)
- Mint leaves chopped for garnish
- Sugar to sprinkle for extra sweetness- optional
Instructions
- In a big bowl, combine your watermelon, strawberry, mango, pineapple, blueberry, lychee.
- DRESSING:Combine your lime juice (juice of 1 lime) and 1/2 cup of reserved lychee juice.Then pour the dressing over the salad.
- Add your chopped mint.
- Sprinkle with sugar (optional for extra sweetness) about 1 teaspoon.
- Mix everything and ENJOY!
