This Easy Sheet pan sausage & potato with peppers is a perfect meal when you are looking for an easy meal to make for a busy weeknight. This is what we call, a fantastic dinner that is delivered for a reasonable amount of time.
Sheet pan and One pan meal are of the same concept. It’s easy, it saves time and makes clean up easier, so less washing multiple dishes or pots and pans.
During weekdays, when I have less time to prepare dinner, my go to recipe is this sheet pan meal. It’s easy to chop up veggies and meat, add some seasoning and… Viola – Dinner is solved!!!
Just like these two delicious, SHEET PAN Roasted CHICKEN AND VEGGIES &Â SHEET PAN SAUSAGE AND VEGGIES (quick & low carb) A wholesome meal with minimal effort. You basically toss all your ingredients and bake.
This time, I will be using Potato. Since potato is one of the food (same thing with rice) that we do not run out at home. Also, I’ll be adding some sausages, bacon and peppers. Above all, no need to think of a side dish to add to your meal, because everything is in your meal. Your all in one Easy Sheet Pan Sausage & Potato with Peppers meal.
Here’s the list of what we need:
- Potato –Â I mixed both red & yellow potatoes
- Sausage –Â Italian or Honey garlic, I suggest boiling the sausage before slicing
- Green Pepper – Red, Yellow or Orange can be used
- Red Onion
- Garlic –Â adds more intense flavor
- Bacon – this can be optional
- Salt & Pepper
- Italian Seasoning
- Olive Oil
- Parsley
- Chili flakes – (optional)
How to make it:
- Boil the sausages, allow to cool then cut into diagonal or round size, about half an inch thick.
- Cut the bacon into small pieces.
- Preheat the oven into 400 degrees F
- Cut your potatoes into bite size, preferably half an inch. Make sure that they are cut into uniform pieces so that they will cook evenly in the sheet pan.
- Green Peppers and Onions cut into small pieces.Â
- Mince the garlic and lastly chop the parsley, leaving few bunches to use for garnish.
- Combine salt, pepper, Italian seasoning and chili flakes (if using)Â
- Place the potato in the sheet pan, add olive oil and half of the salt, pepper, Italian seasoning mixture. Combine until potato is coated with olive oil seasoning mix. Place the bacon on top.Â
- Bake for 15 minutes.
- After 15 minutes, take the sheet pan out and put the rest of the ingredients. Spread them out in a single layer then sprinkle the remaining Italian seasoning mixture and the toss everything until it’s mix.
- Put the sheet pan back in the oven and continue roasting for 10 to 15 minutes or until potatoes are cooked through.
- Garnish with parsley and serve.

Easy Sheet Pan Sausage Potato & Peppers
Ingredients
- 2 Sausage -cut into diagonal or round size Depending on the size- you add more if preferred
- 5 Potato medium size - yellow or red - cut into bite size
- 1 Green pepper (any color will do)
- 1 Red small onion
- 3 Garlic cloves - minced
- 1 tbsp Italian seasoning
- 2 tbsp Olive oil
- 1/4 tsp Salt
- 1 /4 tsp Pepper
- Parsley for garnish
- 1/4 tsp Chili flakes (optional)
- 2 strips Bacon - cut into smaller pieces (optional)
Instructions
- Preheat your oven to 400 degrees F
- Slice your sausage into half inch rounds. Set aside.(If using uncooked sausage, boil the sausage first before slicing)
- Cut the bacon into smaller pieces
- Combine salt, pepper, Italian seasoning & chili flakes
- Cut your potato into bite size, make sure that they are cut consistently. Same thing with your onion, pepper and garlic. Then set aside
- Place your potato first in the sheet pan, add 1 tablespoon of olive oil, minced garlic, half of the salt, pepper, Italian seasoning mixture and combine so that potato is coated evenly. Then add the bacon on top.Bake in the preheated oven for 15 minutes.
- After 15 minutes, take the sheet pan out then add the remaining ingredients, then place the sheet pan back in the oven roasting it for 10 to 15 more minutes. Once the potato is cooked then it is done.
