Forget about take out and make this delicious and healthy Chicken and Broccoli stir fry from scratch. This stir fry recipe is EASY to prepare, you’ll have tasty chicken, crisp and tender broccoli, savory sauce and your dinner will be ready in 20 minutes.
When you are in the mood for an Asian inspired dinner and does not want to go out, then you should give this recipe a try.
Stir fry is my go-to when I want something quick and simple meal to prepare. Perfect for a busy weeknight. In addition to this, everything is made in one pan making for an effortless clean up.
HOW TO MAKE STIR FRY?
- Prepare all the ingredientsÂ
- Slice your meat and vegetable into bite size
- Use a Wok / Skillet / Cast Iron Pan
- The aromatics should be cook low and slow
- Add ingredients according to cook time
- Stir your ingredients often
I’m a skillet dinner fanatic, and I try to make it at least a few times a week. It’s also a great way to use up some of the veggies that has been stored up in my fridge. Easy clean up in a healthy way.
IS STIR FRY HEALTHY?
Stir frying is a fast way to cook small pieces of food in a Wok or Skillet pan. This then results in tender crisp veggies that retain more nutrients than the boiled one. Fat content is also low, since only a small amount of oil is required in cooking stir fry.
WHAT YOU NEED FOR THIS RECIPE – CHICKEN & BROCCOLI STIR FRY:
- Chicken Breast
- Broccoli
- Onion/Garlic/Ginger
- Soy Sauce
- Oyster Sauce
- ¼ cup water
- Cornstarch
- Salt & Pepper
- Pepper flakes (optional)
HOW TO MAKE IT
- Cut your chicken into bite size. Season with salt and pepper, then add a tablespoon (or more) of cornstarch to coat the chicken
- Cut your broccoli into florets (bite size) – place into a microwave safe bowl (to steam it), add a little bit of water then microwave for 2 minutes. Drain the water, set aside.
- Cut the onions
- Mince the garlic and ginger (divided in half)
- Prepare your sauce: Add your oyster sauce and soy sauce, ¼ cup water, half of minced ginger and the remaining cornstarch in a small bowl. Mix all together. Set aside
- In a medium heat, add 2 tablespoons of oil to your wok. Then add your garlic, ginger, and onions. (The aromatics should be cooked low and slow)
- Once the aromatics has softened, move it on the side so that there is still a space for your chicken in the wok (add 1 tbsp. of oil if needed). Stir or try flipping your chicken so that both sides are cooked.
- Now that both your aromatics and chicken are in the wok, stir them altogether, making sure that chicken and aromatics are mixed.
- Add the broccoli, then your prepared sauce. Combine everything stirring it well until the sauce thickens.
- Turn the heat off.
- Serve immediately and Enjoy!
DO YOU HAVE TO COOK BROCCOLI BEFORE STIR FRY?
Personally I like to steam my broccoli in the microwave for 2-3 minutes. Plus, I find it much faster compared to boiling a pot of water and using a steamer basket. The result is the same, your broccoli will still remain crisp and tender.
However, it is not really necessary to steam your broccoli it’s really up to you. As long as you cut the florets into same sized pieces so that they will cook at the same rate.
SOME TIPS TO HAVE A GOOD STIR FRY
- Use WOK, it is the best pan to use for stir frying.
- OIL –Â don’t just use any oil, stir frying requires high heat so it is important to use an oil with a high smoke point like Canola, Avocado, Peanut or Grapeseed oil.
- Dry your vegetables before adding them to a stir fry. Make sure that it is not wet when you add your veggies in the pan. You can either wipe them with paper/kitchen towels or use your salad spinner to take the water out.

Ingredients

Notes
- These recipe serving is good for 2 person. Please double the ingredients if making for 4 or more person.
- Feel free to use whatever soy sauce you have in your cupboard.
