This Asian Chopped Salad is crispy and a healthy meal. It is easy to make with fresh and crunchy veggies. This salad is loaded with Cabbage (purple), Carrots, Red pepper, Romaine lettuce, Green onions, Snow peas and Cilantro. So flavorful and colorful.
Perfect for lunch, as a healthy side dish for summer barbecues, potlucks and picnics. A great make ahead dish, just like my Ceasar Pasta Salad recipe. All you have to do is toss the dressing few hours before serving.
The sesame vinaigrette is full of flavorful sesame oil, soy sauce, rice wine vinegar and honey along with some fresh grated ginger, blended off with olive oil for a quick and easy salad dressing that packs of a good punch of flavor.
INGREDIENTS
- 1 cup of purple cabbage
- 1 cup carrots
- 1 bell pepper – any color (red, green,yellow)
- 3 green onion
- 1 head lettuce
- 1 cup snow peas
- 1/2 cup cilantro
FOR THE SESAME DRESSING:
- 1/4 cup rice wine
- 1 tbsp honey or maple syrup
- 2 Tbsp olive oil
- Â soy sauce (low sodium)
- fresh grated ginger
- 2 tbsp sesame oil
- salt & pepper to taste
INSTRUCTIONS:

Chop romaine and cabbage. Place in a large bowl.

Slice snow peas and green onions. Dice bell pepper, slice carrots, and roughly chop cilantro. Add to bowl.

Make the dressing: in a small bowl whisk together all dressing ingredients.

Pour over salad and toss to combine.
If making ahead of time, store the salad and dressing in separate containers (then combine & toss right before serving) so the salad doesn’t get soggy.
