CORN & CUCUMBER SALAD

A crowd pleasing salad that is fresh, filling and refreshing

Ingredients

  • 6 ears Fresh corn / 3 cups frozen or canned corn
  • 3 Cucumbers chopped
  • 1 Red pepper chopped
  • 1 Green pepper chopped
  • 1 medium Red onion chopped
  • Cilantro (optional)

DRESSING

  • 1 cup Italian dressing
  • 2 tablespoon lemon juice
  • 2 teaspoon sugar can either use honey
  • salt & pepper to taste

Instructions

  • Cook corn until tender (can be grilled or boiled). Once cooked, remove kernels from corn
  • Chop cucumber, red pepper, green pepper and red onion.
  • In a small bowl, mix salad dressing then pour over corn mixture and toss well.
  • chill for a few hours before serving
