Using your mixer bowl, dissolve yeast and your 2 tablespoon of sugar in warm water. Let it stand for 5 to 10 minutes or until foamy.
Add your softened butter, salt and 3 cups of flour, mix until combined. Add additional flour 1/4 cup at a time until the dough pulls away from the sides of the bowl. The dough should be slightly sticky to tough. (do not add more than 4 cups of flour)
Set the speed of your mixer in 2 and let it knead for 3 - 5 minutes until smooth.
Cover the dough with plastic or cloth, place it in a warm spot and let it rise until double in size.
Pre-heat the oven to 400 degrees F and spray your pan (casserole dish 9 x 13 or baking pan) with cooking spray or brush it with butter.
Punch down the dough and divide into 20 equal parts. Roll each piece into a ball and space it evenly in the prepared pan.
Brush the top with melted butter, sprinkle with salt. Cover again and let it rise for 20 minutes or until double in size.
Bake for 15 minutes or until golden brown. If you want the top to be more golden, you can turn on the broiler for 1-2 minutes then take it out from the oven.
After removing from the oven, brush the top with butter. Slightly, let it cool before serving.
