Sweet Potato Breakfast Hash

Ingredients

  • 3 cups Sweet potatoes (cut into cubes)
  • 1 small Onion chopped
  • 8 pcs Bacon
  • 1 tbsp Olive oil (if not using bacon grease)
  • 1/2 tsp Black pepper
  • 1 tsp Garlic and Onion salt
  • 4 Eggs
  • Green onions for garnish

Instructions

  • Prepare and dice your potatoes, then put them in a big Ziploc. Add olive oil, garlic, and onion salt, black pepper into the Ziploc bag. Shake them so that the potatoes will be coated with olive oil, pepper, onion, and garlic salt.
  • Using a cast iron pan, cook your bacon over medium heat and then set aside. Using the same pan, remove excess bacon oil, leaving just about 1 tablespoon in the pan.
    Meanwhile, preheat your oven to 350 degrees F.
    Add the diced sweet potatoes to your pan and cook for about 5 minutes, stirring occasionally.
  • Add chopped onions, garlic, and onion powder followed by black pepper. Continue to stir until the chopped onions are fully combined and the spices are evenly coated with the sweet potato mixture.
    Bake in the preheated oven for 20 minutes or until crispy.
  • After 20 minutes, take the pan out. Create wells in the hash and carefully add in the eggs. Then, add in your cooked bacon.
    Return the pan to the oven and bake for an additional 12-14 minutes until the eggs are set to your liking.
  • Once out of the oven, garnish with green onions.
    Serve and enjoy!

TIPS:
  • You can use any potato you like, such as white, red, or purple.
  • You can also use other root vegetables such as carrots, parsnips, or turnips.
  • For meat: sausage, ham, and turkey can also be used.
  • This dish can be made vegetarian by omitting the meat and adding cheese such as cheddar, feta, or goat cheese.
