Preheat oven to 350 degrees. Set aside and spray the baking pan with nonstick cooking spray. In a large pan, saute onion, and celery over medium heat until softened.
Add sausage & break as it browns. Once sausage is cooked through, season with salt, and pepper and stir in fresh herbs.
Then stir in diced apples, cranberries, bread crumbs, and chicken stock.
Transfer the stuffing mixture to a 9 X 13 baking pan, drizzle melted butter over the stuffing mixture, and cover tightly with foil.
Bake for 25 minutes covered, then for another 20 minutes uncovered until the stuffing is lightly toasted.
Optional: Sprinkle with additional fresh herbs before serving
