Mochaccino Muffins (low fat & dairy free)

These muffins are low fat, moist, and rich with coffee and chocolate flavors. A perfect way to start your morning.

Ingredients

  • 1/3 cup Apple Sauce
  • 3/4 cup Coconut Sugar
  • 2 Eggs
  • 1/2 cup Milk
  • 1 tsp Vanilla
  • 1/2 cup Strong prepared coffee or Espresso
  • 1 1/2 cups Wheat Flour
  • 1 cup Oats
  • 1/2 cup Cocoa
  • 1 tsp Salt
  • 2 tsp Baking Powder
  • 3/4 cup Chocolate Chips (preferably semi sweet)

Instructions

  • Combine apple sauce & sugar, beat in eggs, then add the liquids (milk, coffee & vanilla). Then add oats and stir.
  • Add in the rest of your dry ingredients and stir. Gradually add in your chocolate chips and mix until combined.
  • Spoon the batter into the muffin liners or greased muffin tins.
  • Bake at 350 degrees F for 20 - 25 minutes. Make approximately 1 dozen large muffins
