Cut the chicken into 1-inch pieces and place it into a bowl. Set aside.
In a microwavable bowl, combine honey, orange, and lemon juices, stir in zest, ginger, and garlic and microwave for at least 30 seconds until honey dissolves totally.
Add the chicken to the bowl and mix to coat.
Cut zucchini, peppers, and onions into 1 inch or the same size as your chicken, then add them into the bowl together with the chicken.Mix them so that they will be coated with the marinade. Refrigerate for at least 2 hours or overnight.
Soak your wooden skewers 20 minutes before use.
Thread chicken and vegetables alternately. Reserve the marinade.
Preheat the grill between 375 to 400 degrees F, before placing your skewers.
Place the skewers onto the grill, flipping halfway and brushing with the reserved marinade.Cook for 12-15 minutes, depending on the size of your chicken, or until the internal temperature is 165 degrees F. Serve it with your favorite salad, rice, or quinoa. ENJOY!!
