How to make Easy Banana Blueberry Bread

This amazingly delicious, moist and not so sweet recipe is super easy to make. Loaded with fresh blueberries bursting with flavor and color. Your new go to when making quick bread that is perfect for snacking.

Ingredients

  • 3 Ripe Bananas (mashed)
  • 1 cup Blueberries (fresh) Frozen berries (don't thaw)
  • 2 cups Flour for option: 2 cups wheat flour
  • 1 tbsp Flour for dredging the Blueberries
  • 2 Eggs
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 tsp Cinnamon
  • 2 tsp Vanilla
  • 1/2 cup Butter (melted) for option : 1/2 cup olive oil
  • 3/4 cup Sugar
  • Cooking spray (optional)

Instructions

  • Pre- heat your oven to 350 degrees F or 177 degrees C
  • Mashed your ripe bananas using fork or potato masher. Set aside
  • Coat your blueberries with 1 tbsp flour (dredge). Set aside
  • Spray your 9x5 loaf pan or brush it with a little oil so that it is easy to remove the bread from the pan.
  • Combine all the dry ingredients, Flour, sugar, salt, baking powder, baking soda, and cinnamon in a mixing bowl, mix until fully incorporated
  • In another bowl, add your mashed bananas, eggs, melted butter. Beat slowly until blended
  • Add all your dry ingredients gradually to your wet ingredients, stirring constantly until fully combined. Then add in vanilla.
  • Gently fold blueberries into the batter.
  • Spoon batter into your prepared pan.
  • Bake for 1 hour or until toothpick inserted comes out clean.
  • Cool the bread for 10 minutes, then remove from the pan. Cool completely on the wire rack.

Notes

For additional option : You can use whole wheat flour instead of all purpose flour and olive oil instead of butter.
