Cut your chicken into bite size. Season with salt and pepper, then add a tablespoon (or more) of cornstarch to coat the chicken
Cut your broccoli into florets (bite size) – place into a microwave safe bowl, add a little bit of water then microwave for 2 minutes. Drain the water, set aside
Dice the onions. Mince the garlic and ginger (divide in half)
Prepare your sauce: Add your oyster sauce and soy sauce,¼ cup water, half of minced ginger and the remaining cornstarch in a small bowl .Mix all together. Set aside
In a medium heat, add 2 tablespoons of oil to your wok. Then add your garlic, ginger, and onions. (The aromatics should be cooked low and slow)
Once the aromatics has softened, move it on the side so that there is still a space for your chicken in the wok (add 1 tbsp of oil if needed). Stir or try flipping your chicken so that both sides are cooked.
Now that both your aromatics and chicken are in the wok, stir them altogether ,making sure that chicken and aromatics are mixed
Add the broccoli, then your prepared sauce. Combine everything stirring it well until the sauce thickens.
Turn the heat off. Serve immediately and enjoy!
