Summer Fruit Salad

This is your perfect summer fruit salad. It's refreshing, cooling and hydrating. Bursting with different flavors in every bite.

Ingredients

  • 3 Cups Watermelon - chopped into bite size
  • 1 Cup Strawberry - sliced thinly
  • 1 Whole Mango - Sliced thinly or diced
  • 1 Cup Pineapple - cut into bite size
  • 1 Cup Blueberry
  • 1 Cup Lychee (canned) - chopped - reserve juice
  • 1 Lime (juice)
  • Mint leaves chopped for garnish
  • Sugar to sprinkle for extra sweetness- optional

Instructions

  • In a big bowl, combine your watermelon, strawberry, mango, pineapple, blueberry, lychee.
  • DRESSING:
    Combine your lime juice (juice of 1 lime) and 1/2 cup of reserved lychee juice.
    Then pour the dressing over the salad.
  • Add your chopped mint.
  • Sprinkle with sugar (optional for extra sweetness) about 1 teaspoon.
  • Mix everything and ENJOY!

Notes

This recipe is customizable, you can use whatever fruit that is available to you. If you are not a fan of mint you can opt it out, same thing with sugar.
