This Bakery-Style Mixed Berry Muffins is so EASY to make and quick to prepare. There is nothing like homemade bakery style muffins. Plus, this worked perfectly with frozen berries. A perfect treat for summer or all year round. Great for breakfast or as an afternoon snack.

What I love about these muffins is that it is moist, fluffy, not overly sweet and above all, it is so deliciously fruity. Bursting with juicy strawberries, blueberries, blackberries, raspberries, and a touch of orange zest for brightness.

Another reason why I am also fond about these muffins, is that this recipe is customizable. You can make this according to your liking. I made these using dairy free ingredients. But feel free to substitute some ingredients for a non-dairy product, a pantry staple which you probably have in your kitchen pantry right now.

WHAT YOU NEED TO MAKE MIXED BERRY MUFFINS:

  • Eggs
  • Brown sugar
  • Canola or vegetable oil – dairy free option
  • Butter – non-dairy
  • Oat milk or soy milk – dairy free option
  • Milk (whatever that is available to you) – non-dairy
  •  All purpose flour
  • Whole wheat flour
  • Walnut or almonds
  • Baking powder
  • Baking soda
  • Salt
  • Dried cranberries (optional)
  • Frozen berries
  • Zest of an orange or lemon (optional)

Adding orange zest brightens up the flavor and adds compliment to the berries. You can also use fresh berries in this recipe if it is in season especially if you have lots of fresh ones in your garden.

HOW TO MAKE THESE MIXED BERRY MUFFINS

Begin by preheating your oven to 400-degree F or 205-degree C. Grease or spray your muffin tin with cooking spray or use muffin paper liner.

In a large bowl mix all your dry ingredients, and in another bowl combine all your wet ingredients.

Make a well on your dry mixture and gently add in your wet mixture, followed by your frozen berries. You batter will be slightly sticky.

Pour the mixture into your greased muffin tin and bake for 25 minutes or until toothpick inserted comes out clean.

Bakery Style Mixed Berry Muffins

This bakery style Mixed Berry muffins is moist, fluffy, delicious and it's dairy free. So easy and simple to make plus it stay fresh longer and won't dry out.

Ingredients

  • 1 Egg
  • 1/2 cup Brown Sugar
  • 1/4 cup Canola Oil
  • 1 cup Dairy Free Milk (I'm using oat milk)
  • 1 cup All Purpose Flour
  • 1 cup Whole Wheat Flour
  • 1/4 cup Walnuts or Almonds
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/4 cup Dried Cranberries (optional)
  • 1 1/2 cup Frozen Mixed Berries

Instructions

  • Pre-heat your oven to 400 degree and position rack in the middle.
  • DRY MIXTURE: In a large bowl, combine flours, walnut, baking powder, baking soda, salt and dried cranberries.
  • WET MIXTURE: In another bowl, lightly beat up the egg, add in brown sugar, then oil and milk, mix well.
  • Make a well on your dry mixture and gently add in your wet mixture, followed by the frozen berries. You batter will be slightly sticky.
  • Pour your mixture into a greased muffin tin. This makes 12 muffin.
  • Bake in the center of pre-heated oven for 20-25 minutes or until toothpick inserted in the center comes out clean.

Notes

These muffin recipe can be customize. Feel free to substitute any frozen berries you have on your fridge. 
Using fresh blueberries/berries is also great, no adjustments needed.
For a perfectly fluffy muffins, don't over mix the batter. Bake them quickly, get them in the oven fast after mixing.
Let the muffins cool completely until they are almost in room temperature.
