This Sheet Pan Sausage and Veggies is a quick and fuss-free dinner recipe for busy weeknights.
Just dump all the ingredients on a cooking tray and bake. It is a quick and easy healthy meal, that is low carb and packed full of flavor, perfect for a meal prep.
WHAT IS A SHEET PAN DINNER?
A sheet pan dinner is a dinner that only needs one pan for the entire meal from start to finish. It makes preparing dinner and clean up extremely simple. Since all of the ingredients, in this case, the sausage and vegetables, are cooked together, the flavors blend and create an extra flavorful meal.
Sheet pan dishes have become one my favorite, they’re quick, easy, healthy and best of all, they’re effortless. Just one pan and less dishes to clean.
This recipe can be made with regular sausages and any vegetables you have in your fridge. Similar to my Sheet Pan CHICKEN WITH VEGGIES, but instead of chicken we are switching things up a little bit and opt for sausage. I used spicy Italian sausage in this recipe. Some sausages come either fully or partially cooked. Depending on the brand you buy. Overall, any sausage should work for this recipe.
Next, chop the veggies and sausage in uniform sizes. Throw everything in a bowl together along with the olive oil and spices and toss so that they are evenly coated. I cover my sheet pan with foil or parchment paper first before adding the sausage and veggies. That way, when the meal is done baking, nothing is stuck to the pan, and clean-up is a breeze.
This recipe is filled with tons of colorful veggies, I used zucchini, broccoli, red bell peppers, carrots, and potatoes.
TIP: Make sure all veggies are cut about the same size so that they cook evenly. A simple way to meal prep this recipe is to cut everything then store it in an airtight container or freezer bag in the fridge until it’s time to cook the meal.
HOW LONG TO COOK SHEET PAN SAUSAGE AND VEGGIES?
When you are cooking this sheet pan veggies and sausage recipe, you’ll bake at 400 degrees for about 18 minutes. Make sure to turn the sausage and vegetables halfway through the cooking time, so everything cooks evenly. Also, all ovens bake differently, so be mindful that it could be ready before the suggested baking time.
INGREDIENTS
- 12-16 ounces Sausage about 3 cups (I used Spicy Italian)
- 2 cups potato diced into 1/2” cubes
- 2 cups broccoli florets
- 2 cups zucchini sliced into circles (if you have large zucchini, cut circles in half)
- 1 cup of carrots sliced into circles
- 1 cup bell pepper chopped (any colors you like)
- 2 cloves garlic minced
- 2 tablespoons olive oil
- 1 tablespoon Italian seasoning or taco, Cajun or your favorite spice blend!
- ½ teaspoon salt
- ½ teaspoon black pepper
INSTRUCTIONS
- Pre-heat oven to 400 degrees F (205 degrees C)
- Slice the sausage into 1” rounds. Dice the potatoes into small 1/2” cubes.
- Add the sausage, veggies and minced garlic to a large baking sheet. Drizzle with olive oil and sprinkle with the Italian spices or your favorite spice blend. Season with salt and pepper. Toss veggies with your hands until they are fully combined and coated with olive oil and spices.
- Bake for 20 minutes, flipping halfway. Enjoy with rice, quinoa, in sandwiches or as is for weight loss!
NOTES: Other veggies that are also great in this dish include Asparagus, Green beans, Brussels sprouts, Grape tomatoes, Sweet potato and Onion.
