We all know that Banana Bread is the queen when making quick bread, and also the easiest kind of bread or loaf that everyone can make. But this time we will put a TWIST in our classic banana bread recipe.Â
When you add fresh blueberries, you end up making an amazingly delicious Banana Blueberry Bread. Blueberries also adds extra sweetness to your flavor. Which no doubt, your family would surely love.
HOW TO MAKE THIS EASY BANANA AND BLUEBERRY BREAD
This quick bread is so easy to make. In fact, mixer is not even required. So, what are we waiting for, let’s prep and start baking.
INGREDIENTS
- 3 Ripe Bananas (mashed)
- 1 cup Blueberries dredge in 1 tbsp flour
- 2 cups Flour
- 3/4 cup sugar
- 2 Eggs
- 1/2 cup melted Butter
- 1 tsp Cinnamon
- 1/2 tsp Baking soda
- 1 tsp Baking powder
- 1/2 tsp Salt
- 2 tsp Vanilla
OPTION: Here’s the option if you don’t want to use All purpose flour and butter
- 2 cups Wheat Flour
- 1/4 cup Olive oil
INSTRUCTIONS
- Pre-heat your oven to 350 degrees F or 177 degrees C
- Mashed your bananas and set aside
- Coat your blueberries with flour and set aside
- Spray or coat your 9×5 inch loaf pan with oil so that it’s easy to remove the bread
- In a bowl, combine all your dry ingredients and stir it until blended
- In another bowl, add your mashed bananas, butter, eggs. Mixing it well
- Add in your wet ingredients to your dry ingredients and mix until well incorporated, then add your vanilla.
- Gently fold your coated blueberries into your batter.
- Spoon the batter into the prepared pan
- Bake for 1 hour or until toothpick inserted comes out clean
- Cool the bread, remove from pan and cool completely on the wire rack

What I love the most about this is that, this recipe is not just easy to make but at the same time it is customizable. This means that you can use wheat flour instead of all purpose flour, and trade the butter for olive oil. And it will still give you same result, moist and delicious.
Adding nuts would also be great, but I haven’t tried them yet.
I did try using fresh strawberries (chopped strawberries into small size) instead of blueberries. It turned out good, but not as good as using Blueberries. 🙂
TIPS FOR PERFECTLY MOIST BANANA & BLUEBERRY BREAD
- Use overly ripe bananas (previously frozen are great) for moist and lots of banana flavor
- Fold wet & dry ingredients together with spatula for a tender texture
- Don’t overmix the batter. Overmixing will result to dense and rubbery loaf

STORING/FREEZING/THAWING PROCESS
- Cool the bread completely, no matter how you plan to store it. This is an important step.
- Fresh baked loaf/bread last for 4 to 5 days at room temperature in a sealed container or 1 week inside the fridge
- How to freeze slices – Â slice the bread and double wrap it with plastic wrap then aluminum foil, then place in an airtight bag, making sure to remove the air out.
- How to freeze half & whole loaf –Â wrap the bread tightly in a plastic wrap, followed by aluminum foil, and place in an airtight bag or zip bag. Removing the air out as much as possible then place it in the freezer.
- How to thaw slices – remove the pre-wrapped slice of your loaf and place it on the countertop for 10 to 20 minutes (depending on the thickness of your slice). You can also thaw it in the microwave for 30 seconds and put it in the toaster if you want to achieve a crispier edge.
- How to thaw half & whole loaf – remove your loaf from the airtight or zip bag and place it on the countertop overnight. Slice and enjoy.

Ingredients

- 1 cup Blueberries (fresh) Frozen berries (don't thaw)
- 2 cups Flour for option: 2 cups wheat flour
- 1 tbsp Flour for dredging the Blueberries
- 2 Eggs
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1 tsp Cinnamon
- 2 tsp Vanilla
- 1/2 cup Butter (melted) for option : 1/2 cup olive oil
- 3/4 cup Sugar
- Cooking spray (optional)
Instructions
- Pre- heat your oven to 350 degrees F or 177 degrees C
- Mashed your ripe bananas using fork or potato masher. Set aside
- Coat your blueberries with 1 tbsp flour (dredge). Set aside
- Spray your 9x5 loaf pan or brush it with a little oil so that it is easy to remove the bread from the pan.
- Combine all the dry ingredients, Flour, sugar, salt, baking powder, baking soda, and cinnamon in a mixing bowl, mix until fully incorporated
- In another bowl, add your mashed bananas, eggs, melted butter. Beat slowly until blended
- Add all your dry ingredients gradually to your wet ingredients, stirring constantly until fully combined. Then add in vanilla.
- Gently fold blueberries into the batter.
- Spoon batter into your prepared pan.
- Bake for 1 hour or until toothpick inserted comes out clean.
- Cool the bread for 10 minutes, then remove from the pan. Cool completely on the wire rack.
