Summer is almost here, and no Barbeque is complete without a side dish. We need to balance our grilled meat with a tasty salad. And this salad is one of my all time favorite.
Ceasar Salad – who doesn’t love this salad?? This is a classic and most common salad that most of us enjoy and we will give this salad a twist.
How to make CEASAR PASTA SALADÂ
This pasta salad is packed with flavor and it is filled with chicken, rotini pasta, croutons, over a bed of romaine lettuce. Pasta salads are my go to for lunch and I almost eat them daily, especially during the summer months it is easy to whip up and so flavorful, but this Ceasar Pasta Salad is definitely my favorite.
I’m sure you are wondering what it tastes like? That’s easy to describe. It’s like Ceasar salad, with tender pasta sprinkled in.
What’s great with this recipe is that you can make it ahead of time, but just leave the lettuce, you can add the lettuce when it is ready to serve.
FOR THE PASTA SALAD:
- 8 oz. uncooked pasta, such as rotini or penne
- 2 hearts of Romaine (cut about 1 inch)
- Shredded rotisserie chicken or chopped chicken breasts
- Shallots
- Bacon bits (optional)
- Croutons (optional)
- Lemon (half slice)
- Parmesan cheese, for serving
- 12 oz Ceasar salad dressing
- Salt & pepper to taste
MAKE THE PASTA SALAD:
- Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 10 minutes.
- Drain the pasta and transfer it to a large serving bowl. Squeeze lemon to your pasta.
- Cut the Romaine hearts into 1-inch pieces.
- Begin by tossing the Ceasar dressing & pasta together until the pasta is coated.
- Add the shredded chicken, salt and cracked pepper
- Add parmesan cheese and reserve a little for toppings
- NOTE:Â Keep in mind that the mix will look like way too much dressing, but once you mix the lettuce, it’s the perfect ratio.
- Add the croutons (optional) and garnish with Parmesan cheese and Bacon bits.
- Be sure to wait until you are ready to serve and toss in romaine lettuce.
