ASPARAGUS Stuffed Chicken is a fast and easy chicken breast recipe. I love to make stuffed chicken breast because you can just stuff the chicken with just about anything.

I had a bunch of asparagus on my fridge and decided to make this tasty practically perfect NO GUILT meal. A low-carb veggie that is paired with chicken proteins. Stuffing a chicken breast is a wonderful way to add flavor.
I always buy asparagus especially if it is in season. Summer months (June, July, August) here in Canada is a peak time for asparagus.
This recipe is also great to make ahead. If you like to meal prep as I do, you may be wondering how to cook asparagus stuffed chicken breast ahead of time. Simply complete all the steps except the baking part. Then cover and refrigerate until ready to cook.
Prepping the Stuffed Chicken
Get the chicken to even thickness, next we do something called butterfly the chicken breast. Meaning, simply cut the chicken breast across, not quite all the way through, and then open it up so that it lays flat and thinner. Then you can pound the chicken with a meat mallet to even the thickness.
Season your chicken breast generously with salt and pepper. Sprinkle mozzarella cheese then add 5 asparagus to the center of the chicken and more cheese on top. Roll up and secure the seams, then roll them in the bread crumbs and parmesan cheese mixture. Repeat with the rest of the chicken.
NOTE: If you want to secure your seams, you can add a toothpick to hold and close the spot, but make sure you remove the toothpicks before serving.
INGREDIENTS
- 4 chicken breasts
- 20 asparagus spears
- 1 cup mozzarella cheese
- 2 teaspoons Italian seasoning
- 4 tablespoons Italian bread crumbs
- 2 tablespoons grated parmesan cheese
- salt and pepper
INSTRUCTIONS
- preheat oven to 375 degrees F (190 degrees C)and grease a baking dish with nonstick cooking spray.
- Place plastic wrap on a flat surface and place a single chicken breast onto the plastic wrap.
- Top with another piece of plastic wrap and use a meat tenderizer to flatten the chicken until about 1/2″ thick.
- Season with salt and pepper.
- Add 5 slices of asparagus to the center of the chicken, sprinkle half of the cheese and half of the seasoning on top.
- Roll up and place seam side down on the prepared baking dish and sprinkle with bread crumbs and parmesan cheese mixture.
- Repeat with the rest of chicken breast.
- Bake for 25 minutes or until chicken is cooked thoroughly.
Tadaaaa! Dinner is DONE!!! I served this Asparagus Stuffed Chicken with Ceasar Pasta Salad.
